Quick Egg & Vegetable Stir Fry Recipe

4 eggs

3–4 cloves garlic (finely chopped)
1 onion (sliced)
1 turnip (thinly sliced or julienned)
1 cucumber (thinly sliced)
Chilli powder (as needed)

Step-by-Step Instructions

Step 1: Prepare the Eggs
Crack the eggs into a bowl and add salt and pepper powder. Beat them well until fully combined.

Step 2: Make the Cornstarch Mixture
In another bowl, mix cornstarch with warm water until smooth. Keep this mixture aside for later use.

Step 3: Scramble the Eggs
Heat a pan and add oil and pour in the egg mixture. Cook on medium heat, gently stirring until soft scrambled eggs form. Do not overcook them. Once done, remove the eggs from the pan and set aside.

Step 4: Sauté the Aromatics
In the same pan, add oil. Once hot, add chopped garlic and sauté until it begins to turn slightly golden. Add sliced onions and a pinch of salt. Cook until the onions turn soft and slightly sweet.
