Easy Eggplant and Carrot Stir Fry Recipe

Ingredients

Method

Start by placing a pan on medium heat and adding some oil. Allow the oil to heat for a moment.

Once the oil is ready, add the garlic to the pan. Cook the garlic until it begins to change color slightly. This helps release its aroma and flavor.

Next, add chopped onions along with a little salt. The salt helps the onions cook faster and allows them to change color more quickly. Sauté the onions until they soften.

After the onions cook, add the carrots to the pan and sauté them for a few minutes so they begin to soften.

Then add the eggplants. Continue cooking and stirring until the vegetables are fully cooked and tender.

Once the vegetables are cooked, add the spices. Sprinkle turmeric powder, pepper powder, garam masala, coriander powder, chilli powder, and additional salt if needed.

Mix everything well so the spices coat the vegetables evenly. Sauté the mixture for a short time so the flavors combine properly.

Finally, turn off the flame once everything is well cooked and mixed.
